The best place is the Plateria which is a flamenco club https://laplateria.org.es/ (https://laplateria.org.es/)
There are lots of Tablaos in caves. These tend to be touristy. The best one is run by Enrique Canastera. https://granadainfo.com/canastera/ (https://granadainfo.com/canastera/)
